This stuffing is the real deal; it goes so well with chicken, Christmas turkey or even duck. The important thing is to make sure the onions are very soft before you add in the breadcrumbs.
- 190g good Irish butter
- 340g very finely chopped onions
- 450g soft breadcrumbs
- 7 tablespoons of chopped herbs (sage, tarragon, parsley and thyme)
- Salt and pepper
Sweat the onions in the melted butter until soft, this should take 10 minutes, stir in the herbs and cook for a further minute.
Then stir in the breadcrumbs and season with a little salt and pepper.
The stuffing should not be dry but moist and full of flavor.
