Giana Ferguson, who began making cheese in Spain as a child, and her husband, Tom, have crafted Gubbeen cheese on their family farm since 1980. Since then, Gubbeen has become one of the best known of all the Irish farmhouse cheeses, winning numerous prizes including gold in British Cheese Awards in 2002.
Cratloe Hills Sheep's Cheese is an Irish cheese produced by Sean and Deirdre Fitzgerald at their farm in Brickhill, Co. Clare since 1988. It is the first sheep's cheese to be produced in Ireland. Their hard cheese us made using vegetarian rennet and pasteurised sheep's milk sourced from their own flock of Friesland ewes, which graze, on pastureland on the
Cratloe Hills.
Barry and Lorraine Cahalan started milking Friesland ewes in 2013. They originally outsourced the manufacturing of the cheese to award winning cheesemaker Marion Roeleveld from Killeen Farmhouse cheese. The cheese was then returned to the Cahalan's farm where it was aged and distributed. The cheese production has grown every year and Barry and Lorraine have now taken over the process themselves
