After two decades of running her own café, Judit McNally turned her attention to small-batch chocolates made with ingredients from her own organic garden and local producers — including Blackwater Whiskey, Drumhill honey, Irish sea salt, and even Tramore seaweed caramel.

Originally from Saint-Malo in Brittany, Thierry grew up in his family’s boucherie-charcuterie before bringing his culinary expertise to Ireland in the 1990s. His passion and precision have made Le Paysan a beloved name in Irish artisan food.
