Martin Quinn Old Fashioned Sage Thyme And Onion Stuffing
190g good Irish butter
340g very finely chopped onions
450g soft breadcrumbs
7 tablespoons of chopped herbs (sage, tarragon, parsley and thyme)
Salt and pepper
Sweat the onions in the melted butter until soft, this should take 10 minutes, stir in the herbs and cook for a further minute.
Then stir in the breadcrumbs and season with a little salt and pepper.
The stuffing should not be dry but moist and full of flavor.
