I make these Flapjacks every week, for a snack before a walk or the gym. They give me a boost of energy and stave off any cravings. I used Spelt Flakes instead of Oats, but you can use whatever you have handy!

Ingredients
- 50g Coconut or Sunflower Oil
- 2 Tbsp Nut Butter {I used Meridian Smooth Peanut Butter}
- 1-3 Tsp Honey {See Note}
- 2 Bananas {Mashed}
- 1 Apple {I used Granny Smith}
- 100ml hot water
- 250g Spelt Flakes or Oats
- 85g Apricots {Chopped}
- 100g Raisins
- 85g Mixed Seeds {I used Chia and Pumpkin Seeds}
Method
1. Preheat oven to 165 degrees Celsius, oil a 9x5inch tray and line with baking parchment, set aside.
2. In a saucepan on low heat the oil, nut butter, honey until it’s all melted and smooth.
3. Add the banana, apple and water and stir until combined.
4. In a large bowl, combine the spelt flakes/oats, dried fruits and seeds, add the wet to the dry and stir until all the ingredients are combined.
5. Pour the mix into the prepared tray and smooth out, ensuring the corners are filled.
6. Bake in the preheated oven for 40-50 mins until golden.
7. Allow to cool, before cutting into squares, these will keep in a container in the fridge for 1 week.
*Note The amount of honey you use depends on the ripeness of the bananas, the riper the banana the less honey you will use!
