This dish has been created by Aine Maguire of The Idle Wall Restaurant in Westport for the Theatre of Food at the Electric Picnic 2015 with ingredients from Ardkeen Quality Food Store. It's part of the hangover cure series of recipes - something that may come in handy at Electric Picnic!
Serves 8 | 24 hours
- 600 ml tomato juice
- 2 tblspoon lemon juice, freshly squeezed
- 1 teaspoon horseradish (finely grated on a microplane) or use the bottled stuff
- 4 drops worcestershire sauce
- 80 ml vodka
Blend all the ingredients in a ThermoMix or blender.
Pour the mixture into 8 x 80ml Ice Lolly pop moulds.
Freeze the mixture for 30minutes or so, then put in the sticks.
Return to the freezer for 24 hours.
