Serves 6-8 | 30 mins prep
- 750g Pink Fir Apple Potatoes, peeled, washed and chopped
- 450g of Leeks, Chopped and well washed
- 200g of smoked bacon, cut into strips
- 1.5 Litres of Fresh Chicken Stock
- 250ml of Cream
- 50g Butter
- Salt and Pepper to Taste
Add the stock
Cook until the potatoes are cooked through.
In a blender, blitz all together.
Add the cream and season to taste.
Serve warm with fresh country brown bread.
