This dish has been created by Levis's Corner Bar for the Theatre of Food at the Electric Picnic 2016 with ingredients from Ardkeen Quality Food Store.
900g Lamb for stewing
900g Potatoes, thickly sliced
350g Onions, thinly sliced
1 handful Mixed Herbs (Rosemary, Thyme, Parsley), very finely chopped
- In a very large casserole dish, layer the ingredients in the following order: potatoes, onions, lamb, potatoes, onions, lamb, and finishing with a layer of potatoes.
- Season with the salt, pepper and herbs after each layer of potatoes.
- Pour over the water, almost to cover.
- Bake in the oven, preheated to 180ºC, for three hours.
