Cauliflower and Almond Milk Mash with Happy Pear Coriander Pesto by Trish Deseine

Switching the role of meats and cheese to toppings or condiments and making vegetables the stars of the plate is made more simple when inspired by new and interesting ingredients. 

Serves 4 | 15 mins prep

Ingredients

  • 1 medium cauliflower (or a couple of heads of broccoli, or a mix of both)
  • 150ml MLK almond milk
  • Salt and pepper
  • 50g butter (optional)
  • 1 tub Happy Pear coriander & cashew pesto

Method

Steam the cauliflower, mash with the almond milk, season, add the butter if using and serve with a swirl of pesto and leaves on the side.
