Willie Drohan is a sixth generation shepherd who provides us with the wonderful Comeragh Mountain Lamb. A really special product with its own unique and delicate flavour thanks to the lamb’s diet of herbs, heathers, wild flowers and natural spring water. It is prepared by an artisan butcher and dry aged for ten days. Such is its pedigree; Comeragh Mountain Lamb was honoured at the Euro-Toques Ireland 2011 annual food awards. Everyone is familiar with Spring Lamb, but because of the mountain lambing season, Comeragh lamb is usually only available after late July, we however, are happy to wait for this truly distinctive and special product.
Comeragh Mountain Lamb has been nominated for PGI status by the Department of Agriculture and is now before the EU Comission for Food and Agriculture for approval.
