Beatha Bakery, established in Waterford by Grainne and Darren Collins, is renowned for its sourdough and hand-laminated pastries. With Darren’s background as a head chef and Grainne’s experience in finance, the pair built their bakery from the ground up. Their offerings include brioche and the Breton classic Kouign Amann, which we feature as seasonal specialties in our barista bar.
