Waterford Whisky’s ongoing exploration into the old ways of whiskey-making has taken us, once again, to forgotten flavours: Irish peat, the original taste of Irish whisky.
Bottled to a rate of 74 PPM (phenol parts per million), Woodbrook is the most heavily peated Irish whisky of all time.
Peated: Woodbrook provides notes of lemon skins, beeswax with a suggestion of freshly-torched crème brûlée.
On the palate, dry spices and shortbread with preserved lemons and Lapsang Souchong tea.
The peat source was the ultra-rich inland raised bog of Ballyteige, Co. Kildare. The cut, from deeper in the bog, where the peat is darker, richer and moister, allowing for a slower burn, more flavour imparted, and a higher ppm.
