My vegetable stock is loaded with as many nourishing organic root vegetables as I can cram into the pot, infused with herbs and simmered very slowly to extract every last drop of flavour. My vegetables are locally grown at White Oaks Organic Farm & Rehabilitation Centre in Donegal. This stock is so versatile, it can be used to flavour both meat and vegetarian meals. Carol Banahan
