Prior to the establishment of Blackwater Distillery, Clashmore was the last distillery in Waterford and it closed by 1840s. The distillery chimney still straddles the river Greagagh river which runs through the heart of the village of Clashmore.

Working with local historians, Blackwater head distiller John Wilcox worked out the typical Clashmore grain bill, then brought it to life up the road in Ballyduff. The resulting whisky is something of an ode to the oat, matured exclusively in sherry wood (there were no bourbon casks), this expression is a real peak into the kind of Irish whisky that has been lost to time and the snide slide rule of multi-national accountants.

Blackwater Distillery

Blackwater Distillery is Ireland's newest craft distillery in West Waterford, producing Blackwater No5 Gin™.The inspiration Blackwater No.5’s botanicals came from the 19th century archives of White’s of Waterford, who were the country’s largest importers of spices, they also ran a ship yard and their vessels criss-crossed the globe importing tea from China and botanicals from the impossibly romantic ‘Spice Islands’.  Blackwater No. 5 is a classic London Dry Gin, distilled from the purest spirit, the finest botanicals and soft local water. It balances the confident juniper notes of a traditional London Dry with bright coriander, warm cinnamon and zesty lemon. As Peter Mulryan is a stickler for quality, he insists on first making a vodka which is then used as the base for the gin. Unlike others, they never use straight grain neutral alcohol. Blackwater No. 5 is crisp and elegant, great as a G&T, excellent in a cocktail. It is a gin for those who value quality over quantity, art over commerce and heart over-head
