Lakeshore Goose Fat
For perfect roast potatoes: Par boil 450g potatoes and drain well. Add 1 tablespoon of goose fat to a roasting tin and place in a pre-heated oven for approx. 10 mins at 220’C/424F/Gas Mark 7. Once the fat is just smoking, carefully add the potatoes. Baste well and place them in the oven for approx. 45 mins. Turn and baste them occasionally to ensure they are golden and crunchy all over.
