Just a nod to our faithful old spud, elevated to supper by using some tasty milk and cream and a touch of fruity pumpkin pesto. This would be lovely with some smashed tomatoes and/or some baby spinach or rocket leaves mixed through just before serving or on the side.

4 good sized Floury Potatoes
100ml Fairfield Dairy Milk
A dash of Cream
Prunotto Pumpkin Pesto
Salt and Pepper
Method
Peel and steam the potatoes.
Warm the milk and mash the spuds until soft.
Season and stir through the cream.
Top with pumpkin pesto and serve with a green salad on the side.
