Home-Made Honey Baked Granola

Granola makes a delicious breakfast, a healthy snack or just a scrummy topping for yoghurt or ice cream. We sell a wonderful range of super granolas here at ardkeen.com but it's always nice to make your own sometimes especially as it allows you to eat it warm! Try this recipe - it's nice and easy!

Ingredients

  • 175gm Porridge Oats
     

  • 75 grams sliced or ground almonds
     

  • 75gm dried cranberries
     

  • 50g butter

  • 3 tablespoons honey

  • 1 tablespoon vanilla extract

  • 1 teaspoon ground cinnamon

  • Pinch of salt

Method

Heat the oven to 180 degrees C and line a baking sheet with parchment paper or aluminum foil.

Combine the oats, dried cranberries and sliced almonds in a medium bowl.

Melt the butter in a large saucepan on the stove.  Add the honey, vanilla extract, cinnamon and the pinch of salt to the melted butter.

Add the oats, cranberries and almonds to the saucepan and use a spoon to stir until they are well coated and glistening. You have now made granola.

Transfer the granola to the baking sheet and spread out to one layer.

Place in the oven to bake. You will need to mix it every 8 to 10 minutes, until all the oats are golden brown. This will take approximately 20 to 30 minutes.

Towards the end of the baking time, check your granola every couple of minutes to prevent it from over-browning.

Transfer baking sheet to a cooling rack and let the granola cool.

If you're storing it, make sure that it has fully cooled before storing in a glass jar or other airtight container. It will last for up to two weeks.
