Hearty Apple Crumble with an Oat Topping.

This new take on an old classic combines honey, oats and seeds to make a dairy free crumble topping. Very different from the more common butter based crumble but equally delicious. Ideal for people who don't eat dairy. For those of you who do, it is delicious served with softly whipped fresh cream, vanilla ice-cream or pouring custard. Dairy free versions of these are available with us reccomending the NoBo dairy free ice-cream we sell in the shop.

Ingredients

  • 140g porridge oats
     

  • 25g ground almonds
     

  • 1 tbsp sesame seeds
     

  • 1 tsp ground cinnamon
     

  • 50g butter
     

  • 1 heaped tsp honey
     

  • 800g apples peeled, cored and roughly chopped. You can use cooking apples or eating apples.
     

  • zest and juice 1 large orange
     

  • 10 cardamom pods
     

  • 2 tbsp brown sugar (or a little more if using cooking apples)

Method

Heat oven to 180C/160C fan/gas 4.

Put the oats, almonds, sesame seeds and cinnamon into a large mixing bowl.

In a small pan melt the butter with the honey then stir into the oats until it looks like rough breadcrumbs – you might need to use your hands.

Put the apples, orange zest and juice and cardamom in a pan and cook for 10 mins until softened.

Pick out the cardamom pods.

Spoon into a baking dish, sprinkle with the sugar and scatter with the crumble mixture. Bake for about 40 mins until golden and crunchy.

Serve with vanilla yogurt, ice cream or custard.

As this is a dairy free dessert, you might like to serve with a dairy-free custard or ice-cream such as the NoBo ice-cream we sell in store!
