Ciaras Pantry Marmalade Chicken
Ciara’s Pantry Seville Orange Marmalade
Chicken thighs 6-8
4 Garlic Cloves Chopped
1 tbsp chopped ginger
2 tbsp mustard (wholegrain or dijon)
Juice of 1 orange
Pinch of salt, black pepper and chilli flakes (optional)
Preheat oven to 180c.
Mix all ingredients in a large bowl.
Add chicken pieces and coat well.
Line ceramic dish with baking parchment and place chicken in dish.
Pour over any remaining mix.
Cover with foil and bake for 30 minutes,
Remove foil and continue baking for another 15-20 minutes until browned.
Sprinkle with a little sea salt, garnish with orange slice and parsley or spring onions.
Serve with salad, mash or cous-cous.
