Cauliflower, Apple and Cashel Blue Cheese Salad
This simple recipe combines delicious Irish apples, award winning Cashel Blue cheese, smooth Irish honey and crunchy cauliflower to create a light salad. Serve as a starter, a side dish or as a main meal with some nice crusty bread!Print this Recipe Send to a friend Share
5 tbsp cider vinegar
2 tbsp rapeseed oil
little drizzle of honey
3-4 apples, cored and thinly sliced
1 small cauliflower, chopped
handful of alfalfa sprouts (optional)
200g Cashel Blue cheese - crumbled
small bunch mint, chopped
50g sunflower seeds, toasted
Combine the sliced apple, chopped cauliflower, alfalfa sprouts and Cashel Blue cheese in a bowl and set aside.
To make the dressing, whisk the vinegar, rapeseed oil and honey with some seasoning.
Pour the dressing over the salad ingredients.
Scatter the mint and toasted seeds just before serving.
Serve as a side salad or as a main meal with crusty bread.
