800g chickpeas – soaked & cooked
4 beetroots – roasted with garlic
2 tbsp tahini
100ml lemon juice
100ml olive oil
Dukkah to serve
To make the beetroot hummous, combine all ingredients in a blender and simply blend until they have combined and you are happy with the texture.
Transfer to a serving bowl, serve with dukkah and your choice of breads and vegetables for dipping.
