Andrew Reddan Pink Fir Apple Potato Leek And Smoked Bacon Soup
750g Pink Fir Apple Potatoes, peeled, washed and chopped
450g of Leeks, Chopped and well washed
200g of smoked bacon, cut into strips
1.5 Litres of Fresh Chicken Stock
250ml of Cream
Salt and Pepper to Taste
1. Sauté the potatoes, leeks and bacon in a pot with the butter until soft and slightly brown.
2. Add the stock
3. Cook until the potatoes are cooked through.
4.In a blender, blitz all together.
5. Add the cream and season to taste.
6. Serve warm with fresh country brown bread.
