John Murphy of Uncle Aidan’s Flour came to the attention of many as an entrepreneur on RTE’s Dragons’ Den. John runs Ballyminane Mills which dates back to the early 1800’s and is situated just outside Enniscorthy in County Wexford. The flour produced at the mill uses locally sourced wheat from the nearby Ballyhamilton farms and is ground slowly between rotating French burr stones powered by the Urrin River. This traditional stone grinding process ensures that the wheat germ remains intact and nutrients are retained. Research has also shown that stone-ground flour is especially low GI.
