Our products are slow-smoked, from local fresh wild-caught fish devoid of any artificial additives or preservatives' Sally Barnes is the well known name behind Woodcock Smokery which works exclusively with wild fish, and cures products in a traditional manner. This takes prime quality fish, native hardwood timbers, and time. Lots of time. All aspects of the process, (filleting, salting, pin boning, and slicing) are done by hand. There are no shortcuts. Wild salmon, in particular, rewards this particular attention. This is a small, family-run business, exclusively using wild fish caught by sustainable methods. Their methodology is time-honoured and traditional and all their products take time to prepare and finish without making use of any colourings or artificial preservatives. All they add are salt, smoke, skill, care and lots of time.
