Top of the pecking order: Organic & Free-Range Chicken

Is there anything more nostalgic than the smell of a chicken roasting? Surely the backdrop to many Irish childhoods, roast chicken is an iconic dish that has changed little over the years. Succulent tender meat, crispy golden skin, stock rich gravy, crispy potatoes and fresh vegetables, all evoke memories of communal eating, conversation and yes, washing up afterwards.

Here at Ardkeen Quality Food Store we have some of the best producers of free range and organic whole chickens in Ireland. Quality, taste and welfare are paramount when choosing a supplier and we and our customers can rest assure that whether they are from Sean Ring’s Organic Farm in Castlecomer, Mary Regan’s Organic Farm in Enniscorthy, Bertram Salters Carlow Free Range or Trisha Butlers Family Farm in Mullinavat, these birds have enjoyed the freedom to roam outside, peck and scratch the earth and stretch their wings, just as nature intended. The result… a bird that grows at a natural speed, the enchanced flavour of which is immediately clear on tasting.

The cost of producing a bird that has been fed and reared in this natural and sustainable manner will be more than one which has been intensively farmed. It is a more expensive product to produce; it is as simple as that. However, as one of the few creatures we ever buy whole to cook and eat (pork, beef and lamb mostly come already cut up) there is so much value to be had in utilising the whole bird. There is minimal waste, so although your initial output may be more, the true value that is an Irish Free Range or Organic Chicken is in the many dishes that can be created from that one bird, from soups to pates, lunch box delights and more. 

So, this week’s Thursday Tasting will be a real treat, with roast chicken on the air from 3. We would love you to pop by and enjoy the delicious, succulent meat from these lovingly reared and prepared birds. It is perhaps a few weeks since we featured a wine with our Thursday Tasting so this week will put that to right with a lovely Domaine de l’Herré Colombard / Ugni Blanc from the Gasgogne in south east France and an Old Vine Garnacha, from the Navarra region of Spain. Perfect for all those beautiful roast chicken flavours and sweet, sticky trimming.
