Thursday Tasting at 3 – Pancake Condiments

Although archaeological evidence suggests that pancakes were probably the earliest and most widespread cereal food eaten in prehistoric societies, they were more recently associated with the liturgical event of Lent. Pancakes were the perfect food to use up all the eggs and milk in the house before the abstinence of the following 40 days. Coming in deep winter it was an event that cheered and delighted all and is still a day that holds nostalgic memories for most.

We were always in school early on Shrove Tuesday to write the Pancake Poem on the blackboard before the teacher arrived.

It was somehow part of the mystery that we would not own up to who wrote it and to give the teachers their dues, they played along and the homework free half day was granted
Like many foods that were seasonal in the past, we now see pancakes on menus all year round. They are store cupboard ingredients, easy to make and versatile in that they can be both sweet and savoury but there is still something very special about Pancake Day itself and I think most people look forward to it with some glee. 
Ingredients carefully weighed, batter made and left to rest and then sizzling on the pan after dinner, it is a lovely occasion to share and enjoy. Challenging siblings to flip or not to flip, I think we have all had a few pancakes that hit the floor or the ceiling. There is always a good ‘flipper’ in every house who for that hour or two each year, can display his or her prowess with the pan.

Pancake shape and structure varies worldwide but whether you like them large, small, flat, full or delicate, there is no doubt that everyone has their own favourite topping. With this in mind, this week’s Thursday Tasting at 3 will be a chance to taste some of the very best condiments we have in store. Whether its butterscotch sauce, lemon curd or good old Irish butter and lemon, we will have a veritable carnival (it is also Mardi Gras remember) of quality Irish produce to taste and enjoy. 
We have Traditional Pancake and Chocolate Chip Buttermilk Pancake recipes here for you, the latter using Durrow Mills Sprouted Flour. We will also have our own very popular Cookshop Batter available in store from Thursday to make life a little easier. 
We will leave the flipping to you on the actual day, but do pop in to store for a taste on Thursday and we’d love to hear you favourite pancake stories.
