Thursday Tasting at 3 – HOLO Kombucha and King of Kefir

In the third of 3 tastings designed to explore how to include more fermented foods in our daily diet, this week’s Thursday Tasting at 3 features alternative to commercial sodas and high sugar soft-drinks HOLO Kombucha and King of Kefir. Both these naturally fermented products have many health benefits as well as being refreshing and utterly delicious!

A fermented, lightly effervescent drink, Kombucha is produced by fermenting tea, sugar and a "symbiotic culture of bacteria and yeast" (SCOBY). Proudly organic and certified by IOFGA, HOLO Kombucha is the brainchild of Youghal brewers and twin brothers Padraig & Adrian Hyde. Their goal to make a nutritious, organic drink has been realised with this small batch, hand crafted Kombucha. Rich in enzymes, vitamins, minerals, antioxidants, bacterial and amino acids, Kombucha is a great and easy way to include more fermented food into your diet.

Pronounced Keh-FEER, Water kefir is made from what is referred to as “grains” or in scientific terms, clusters of bacteria and yeast living in a symbiotic relationship. The beneficial bacteria and yeasts present in the water kefir grains metabolise the ingredients into an array of beneficial acids and infuse it with beneficial microorganisms, additional B vitamins and enzymes.

Operating from the iconic Chocolate Factory building in Dublin central, former chemical engineer Gerry Scullion’s King of Kefir contains no preservatives, stabilisers or emulsifiers and provides another great alternative to commercial sodas. A great array of flavours too, with Lemongrass & Ginger, Chilli & Ginger Cucumber and Mint & Thyme.

The last three week’s Thursday Tastings which focused on exploring fermented foods has been a lot of fun and a great way to start conversations about food.
