We are so excited to see Neven Maguire visit The Little Mill Company, an Irish Family located in Bennettsbridge,Kilkenny - one of our very proud Food Heroes!

The Mosse family know their flour, it’s in their genes! Stretching back seven generations, the family have been milling on the banks of the River Nore.

When you have been handling, milling & selecting wheat for that long, you are not only knowledgeable but passionate about it too. Their 100%  traditionally stoneground wholemeal flours use local Irish grain.

Their flours are true wholemeals, meaning they contain nothing but the wholegrain and all its natural goodness!

  • The Little Mill Scone Mix 450g

    The Little Mill Scone Mix 450g

    You will need: 50g/2oz soft butter, 175ml/6fl oz milk, 2.5”/60mm scone cutter, rolling pin, baking tray, wooden spoon, mixing bowl, pastry brush. To get started turn your oven on to 180C/350F/Gas Mark 4 and lightly flour your baking tray.

    Mix; Empty the contents of the packet into your mixing bowl and gently rub in the butter with your fingers. Add the milk to the mixture and mix with wooden spoon until a stiff dough has formed. Remove from the bowl onto a lightly floured work surface and gently knead into a soft ball. Allow dough to rest for 2 minutes.
    Cut; Lightly flour your work surface again. Using your rolling pin, roll out the dough until approx. 1”/2cm thick. Use scone cutter to cut out scones and place each one on a floured baking tray. Press trimmings together and repeat process until all the dough has been used up.
    Bake; brush the top of the scones with milk using a pastry brush. Place into your preheated oven for 12-13 minutes or until golden brown. Remove from the oven and allow to cool.

  • The Little Mill Brownie Mix 500g

    The Little Mill Brownie Mix 500g

    You will need: 50g/2oz soft butter, 130ml/4.5fl oz. milk, 9”/22.5cm square tin, mixing bowl wooden spoon. To get started turn your oven on to 160C/320F/Gas Mark 2 ½ and lightly grease your 9”/22.5cm square tin with butter.

    1. Mix; Empty the contents of the packet into your mixing bowl and gently rub in the butter with your fingers. Add the milk. Beat with the wooden spoon to form a thick chocolate mixture.
    2. Tin; Empty the batter into the greased tin and spread evenly with the wooden spoon.
    3. Bake; Place the tin in your preheated oven and bake for 18-20 minutes. 18 minutes if you like them fudgy. Remove from the oven and allow to cool in the tin for 10 minutes before cutting into even portions. Serve when completely cool.
    4. Serving Suggestions: Delicious with whipped cream, vanilla ice cream or simply as they are.
