We know Sunday the 14th of March won’t be relevant to all of us and indeed sad for some, but for many, Mothering Sunday is a day to celebrate and say thank you for the love and support their Mum has shown through the years. 
This past year has meant that time spent together has become even more precious and sometimes finding a way to express that gratitude even harder. It shouldn’t be all about finding ‘the perfect gift’ and perhaps the most thoughtful is simply making the time to say how much she means to you.

    Duncannon Smokehouse Wild Irish Salmon 100g

    All of the fish are filleted by hand, which ensures minimal bruising, and then pin boned by hand. The boned fillets are then dry salted for several hours. Duncannon Smokehouse's Irish Salmon, Trout and Haddock are then transferred to racks and the smoking process begins. This can take between 7 and 12 hours. Once the smoking has been completed the fish are removed from the kiln and chilled.

    THE HARVEST

    It starts at the end of August and extends till the end of October. It is usually carried out manually and the grapes are transported to the winery in boxes containing 25-30 kgs or in small stainless steel trailers when the vineyard is close to the winery.

    VINIFICATION

    Grapes are harvested at night to avoid high temperatures and premature fermentations. They are quickly transported to the winery and refrigerated at 10ºC to avoid the color of the skins dyeing the must. Once the must is pressed and each variety has fermented separately at a constant 16ºC to preserve its primary aromas, the must is blended and bottled along with the base wine, to which the yeast and sugar are added to produce the formation of bubbles. For the second fermentation, the bottles are kept in underground cellars at a constant 15º-17ºC where they are in contact with their lees.

    THE AGEING

    This cava spends a minimum of 12 months in the bottle,. After this period, sediments are decanted naturally and removed and liqueur is added.

  • The Little Mill Scone Mix 450g

    The Little Mill Scone Mix 450g

    You will need: 50g/2oz soft butter, 175ml/6fl oz milk, 2.5”/60mm scone cutter, rolling pin, baking tray, wooden spoon, mixing bowl, pastry brush. To get started turn your oven on to 180C/350F/Gas Mark 4 and lightly flour your baking tray.

    Mix; Empty the contents of the packet into your mixing bowl and gently rub in the butter with your fingers. Add the milk to the mixture and mix with wooden spoon until a stiff dough has formed. Remove from the bowl onto a lightly floured work surface and gently knead into a soft ball. Allow dough to rest for 2 minutes.
    Cut; Lightly flour your work surface again. Using your rolling pin, roll out the dough until approx. 1”/2cm thick. Use scone cutter to cut out scones and place each one on a floured baking tray. Press trimmings together and repeat process until all the dough has been used up.
    Bake; brush the top of the scones with milk using a pastry brush. Place into your preheated oven for 12-13 minutes or until golden brown. Remove from the oven and allow to cool.
