    St. Kevin, the man on our bottle, stood apart. This gin does the same. We sustainably forage what grows wild in the mountains around our distillery. It goes fresh into the still that very day, making for a beautifully balanced, deeply layered, terroir inspired gin. Botanical oils may cloud when mixed – that’s a good thing!

    • The Nose: Fresh Spring notes with juniper, citrus, pine. A forest clearing in bloom.

    Blackwater Juniper Cask Gin is Ireland’s first aged gin. At Blackwater, they use the same 12 botanicals you’ll find in No.5, but in different quantities. The casks are made just for the company, from Juniper wood they source in Eastern Europe. Each cask holds around 50 litres and they are commissioned them unscorched. During the summer an early prototype of this gin debuted at London’s Junipalooza where it sold out.

    Thin Gin is a fun, fruity and fragrant gin that often appeals to the unconventional and naughty. When Isacc Thin couldn’t find the exquisite gin he’d tasted in Paris during an afternoon assignation with the wife of an Austrian Count, he set about creating his own. Hiding in Ireland from several vengeful husbands Thin conducted his experiments using juniper, coriander, citrus peel and Irish hedgerow fruits. He settled on thirteen; one for every lady he’d kept company with on his cut-short European jaunt.

  • Dingle Original Pot Still Gin 70cl

    Dingle Original Pot Still Gin 70cl

    Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. Our aim was to create a totally new gin, one which worked within the great tradition of gin distilling but which also came with a degree of innovation.

    Dingle Original Gin is made in small batches of 500 litres. In terms of its broad style, this is what is categorised as a London dry gin but the unique character and flavour come from our painstaking and original choice of botanicals.

     

    This secret combination of flavour elements are macerated in spirit for 24 hours. Then, when the spirit is distilled, it passes through a flavour basket in the neck of the still. This underlines the attention to detail that is an essential part of our whole approach to the art of distillation.

    We are not prepared to reveal our recipe but are happy to give some idea of what is involved in creating the unique flavour profile of Dingle Original Gin.. We use, amongst other botanicals, rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape. It’s a formula unknown elsewhere and is calculated, amongst other things, to create some sense of place and provenance, what winemakers might call the gout de terroir.. The spirit is collected at 70% abv and then cut to 42.5% abv using the purest of water which we draw from our own well, 240 feet below the distillery.

    Peter Mosley sums up DOG’s unique character in a few words: “The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper. But, to be honest, you really have to taste it for yourself.”

    The strawberries in this gin were grown just outside Enniscorthy in County Wexford, by Susan Kearns. For maximum flavour not only do we distil the strawberries, but before bottling we add even more of them to our gin. This is where the berries lend their summery scent and colour to the spirit.
