Blackwater Distillery Small Batch Irish Gin No 5 50cl
Blackwater No. 5 is a classic London Dry Gin, distilled from the purest spirit, the finest botanicals and soft local water. It balances the confident juniper notes of a traditional London Dry with bright coriander, warm cinnamon and zesty lemon. Blackwater No. 5 is crisp and elegant, great as a G&T, excellent in a cocktail.
We designed Blackwater No. 5 from top to bottom using only the botanicals imported into Ireland by White’s of Waterford during the 19th century. Of the twelve botanicals used, ten are classic while two are rather special and probably unique to Blackwater No.5 Gin. All are locally sourced where possible, or from wherever in the world the finest grade happens to be.
Drumshanbo Gunpowder Irish Gin 70cl

Blackwater Distillery Juniper Cask Gin 50cl
Juniper berries are what give gin its distinctive flavour. Which got us thinking. What would happen if you aged gin in a cask made from juniper wood?
So we had some juniper barrels made just for us, which wasn’t as easy as it sounds. And as juniper trees aren’t very large, none of our casks hold more than 50 litres which means stocks of this gin are strictly limited. So if you are lucky to come across a bottle of our award winning Juniper Cask Gin, be sure to try it.
We use the same 12 botanicals found in Blackwater No.5, but in a slightly different proportion; we push orange and the sweeter roots because, like its berries, juniper timber is, how shall we put it – a wee bit astringent?
Thin Gin Irish Dry Gin 70cl
Thin Gin is a fun, fruity and fragrant gin that often appeals to the unconventional and naughty. When Isacc Thin couldn’t find the exquisite gin he’d tasted in Paris during an afternoon assignation with the wife of an Austrian Count, he set about creating his own. Hiding in Ireland from several vengeful husbands Thin conducted his experiments using juniper, coriander, citrus peel and Irish hedgerow fruits. He settled on thirteen; one for every lady he’d kept company with on his cut-short European jaunt.

Dingle Original Pot Still Gin 70cl
Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. Our aim was to create a totally new gin, one which worked within the great tradition of gin distilling but which also came with a degree of innovation.
Dingle Original Gin is made in small batches of 500 litres. In terms of its broad style, this is what is categorised as a London dry gin but the unique character and flavour come from our painstaking and original choice of botanicals.
This secret combination of flavour elements are macerated in spirit for 24 hours. Then, when the spirit is distilled, it passes through a flavour basket in the neck of the still. This underlines the attention to detail that is an essential part of our whole approach to the art of distillation.
We are not prepared to reveal our recipe but are happy to give some idea of what is involved in creating the unique flavour profile of Dingle Original Gin.. We use, amongst other botanicals, rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape. It’s a formula unknown elsewhere and is calculated, amongst other things, to create some sense of place and provenance, what winemakers might call the gout de terroir.. The spirit is collected at 70% abv and then cut to 42.5% abv using the purest of water which we draw from our own well, 240 feet below the distillery.
Peter Mosley sums up DOG’s unique character in a few words: “The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper. But, to be honest, you really have to taste it for yourself.”
Blackwater Distillery Wexford Strawberry Irish Gin 50cl
What is more summery than strawberries? Nothing really, except perhaps sun block. We tried distilling that but it tasted disgusting, so we went back to strawberries. In all, thirteen botanicals are distilled to produce this gin, the largest of these being strawberry, as you might expect.
The berries are grown for us just outside Enniscorthy (Co. Wexford) and transported to the distillery in a large cool box. After distillation, we soak even more strawberries in our gin (that’s how it gets its colour), then we bottle it. We don’t add any sugar or sweetener of any sort.
Bertha’s Revenge Small Batch Irish Milk Gin 70cl
Bertha, a legendary Droimeann cow from Sneem, Co. Kerry died in 1993. At 48 years of age she became the world’s oldest cow, having given birth to an eye-bulging 39 calves over her lifetime. To immortalise her memory, we have brought her back in spirit – literally! Using whey alcohol from Irish dairy farmers, our own natural spring water and incorporating an interesting mix of locally foraged and grown botanicals we have hand-crafted a gin reflecting Bertha in her prime. A fragrant nose, soft mouth feel and warming, spicy middle notes to mirror her maternal core. And a long, fruit-driven finish to celebrate her longevity.
Ballyvolane literally translates from Gaelic as ‘the place of springing heifers’ – a testament to the fertility and natural diversity of the land on which the estate lies.
