Feeding Ourselves Well

2020 is a year we will all remember, but most of us would rather forget! However, with the dawn of a new year comes positivity, we are embracing 2021 as a year to treat ourselves well and where better to start than with food? We're not talking about a chunk of dark chocolate and a good tempranillo, but both certainly have their place in our 2021 too! 
Over the years we have come across lots of evidence of how food may play a role in our wellbeing, not just physical health but also mental health too, whether it is supporting gut microbiome with fermented food or simply savouring the comfort of a slow cooked stew. 
Beyond this, there is a mindful peace that can come from baking or cooking, as many of us discovered baking in 2020 and the patience required to mind that sourdough starter!
Have you decided to embrace some good food resolutions in 2021? Check out some ideas below for inspiration:

Incorporate more immune system supporting foods into mealtimes: Turmeric and ginger are flavourful additions to so many dishes or you can now get a cold pressed juice from our juicebar which will definitely add a pep to your breakfast routine! We’ve had success using kimchi in all sorts of recipes, from a grilled cheese sourdough sandwich to a salad dressing, and rather than slurping a spoon of it in the mornings, we’ve discovered the depth of flavour and tenderising properties Apple Cider Vinegar adds to slow-cooked pork. Experimentation is the key here.

Eat more fruit & veg: We really can’t get into trends like ‘Veganuary’, but we would like to go meat-free at least one day a week, so using beans and mushrooms or lentils where the recipe calls for minced beef for example. We’re particularly excited about Garryhinch Wood Exotic Mushrooms which are superb quality and a really meaty substitute! 

Be condiment clever: Trying to use less salt? Add pepper or citrus zest to zing up salads, or use herb blends like za’atar or sumac which is particularly good for roast chicken and potato wedges. Seaweed can also be used to add umami flavours to everything from stirfrys to soup.

Embrace your morning porridge: This is a nutritious hug in a bowl on dark mornings, we’re fond of mixing it up – sometimes overnight oats made with an excellent Irish apple juice or a dollop of great almond or peanut butter works a treat too.

Get going with a great cup of coffee: Working from home we mourned not meeting the barista every morning. How could you ever recreate that perfect crema at home? Well, we have discovered the most important element is choosing the best possible coffee, our current crush is local Tra Coffee Colombian but we like to vary so its good we have so many Irish Roasters to choose from!

Alcohol free?? We are not quite on board with Dryuary but there are some amazing low or no alcohol options out there, and we are definitely on board with Tryuary!

    How to make nutritious Bunalun organic porridge; Add 80g of Bunalun organic porridge oats and approximately 440ml of milk or cold water into a saucepan. Bring to the boil and cook briskly for 3 to 4 minutes, stirring all the time. Continue to cook for a further 2/3 minutes for a softer consistency if preferable. The cooking time will be reduced if the oats are soaked overnight.

    A bowl of Flahavans is all about taste. Creating that taste starts with sourcing the finest quality oats from the rich rolling farmlands of southeast Ireland. Our mill situated in a small village in Waterford, has been an independant family business for over 200 years. We use milling techniques handed down over generations to create perfect porridge oats. The unspoilt local environment and mild wet climate is ideal for growing the finest oats. At harvest time we take in our new season oats, drying and storing them for the year ahead. Because our ats are less processed, they keep their natuarl wholesome texture and flavour, the result is a warm nourishing bowl of Flahavan's. Certified Organic which in Ireland is subject ti the most stringent regulations and is strictly monitored by the organic Trust Ireland; Cooking Instructions- Cook on the hob(serves 2)- Stir half a cup(80g) into 400 mls of water/milk. Bring to the boil and simmer for 5-7 minutes stirring occasionall, allow to stand for 1 minute before serving; Microwave-Stir 40 g of Flahavans Course Cut oatmeal into 170 mls of water/milk, Microwave on high for 3 minutes, stir and return to microwave to cook for another 1 minute before serving(based on a 900W microwave)
