DINGLE SINGLE MALT WHISKEY BATCH NO.4

This marriage of Bourbon, Sherry and Port casks has resulted in a full flavoured, yet harmoniously balanced mix of creamy vanilla sweetness from the American oak, which combines beautifully with dried fruit flavours of apricot and sultanas from the fortified wine casks.

DINGLE CASK STRENGTH WHISKEY BATCH NO.4

This cask strength limited edition release of our Batch No. 4 whiskey reflects the original flavour of the Single Malt whiskey matured in a marriage of Bourbon, Sherry and Port casks. The significance in 500 bottles is a nod to, and reflects our Founding Fathers all across the world. It is at this strength where the flavour profile shows the true extent of this whiskey.

Passionate about cask innovation and craft, we believe in creating unique taste profiles for you to discover.

Lambay Small Batch Blend is made from a blend of grain whiskey and Lambay Single Malt Whiskey. Our craft is to find the right balance between the smoothness of the grain spirit and the complexity and richness of our Single Malt whiskey. Our grain spirit is pure, smooth and triple distilled, making it easy to sip. It is aromatic, floral and balances perfectly with our Lambay Single Malt. This Blend creates a long lingering taste with enough body to deliver a whiskey that can be enjoyed straight, mixed or in a cocktail.

Like most Irish whiskeys, our spirit is matured in bourbon casks for its full maturation period before the intricate process of blending and finishing. The art of finishing is an extension of the whiskey-making process and it is here where our French Cognac Master Blender, Patrick Léger brings a unique taste profile to our spirit.

Our finish is wholly decided by a complex series of tasting and smelling. Our goal is to reach the optimum point of evolution of taste during the finishing stage. We allow for just enough time for the complex taste molecules to marry together to ensure a pure flavour of Irish whiskey with a hint of fruit from our cognac casks.

Our Small Batch Blend whiskey is most popular amongst bartenders and consumers alike for its mellow soft and sweet taste. Lambay Irish Whiskey Company does not (yet!) have a distillery on the island, but we remain transparent in stating that we source only the finest distillates from an independently certified whiskey distillery in Ireland before blending & bottling.

  • Blackwater Distillery Wexford Strawberry Irish Gin 50cl

Blackwater Distillery Wexford Strawberry Irish Gin 50cl

What is more summery than strawberries? Nothing really, except perhaps sun block. We tried distilling that but it tasted disgusting, so we went back to strawberries. In all, thirteen botanicals are distilled to produce this gin, the largest of these being strawberry, as you might expect.

The berries are grown for us just outside Enniscorthy (Co. Wexford) and transported to the distillery in a large cool box. After distillation, we soak even more strawberries in our gin (that’s how it gets its colour), then we bottle it. We don’t add any sugar or sweetener of any sort.
