With a New Year comes a renewed commitment to include foods in our diet that play an important part in our overall wellbeing. Gut health is now acknowledged as a vital component in that overall good health.
The modern day western diet, often high in processed and refined foods, can play havoc with our gut health. Fermented foods like Vinegar, Sourdough, Kefir, Sauerkraut, Miso, and Kombucha, help to bring the gut back into balance by replenishing the missing or unbalanced components in the gut microbiome. Fermented foods are also easier to digest, their nutrient rich fermented form is more accessible to the body, allowing it to manufacture or synthesise other essential vitamins that we need for good health.
In mid-winter, convenience is often key to successful healthy eating and so this week’s Thursday food tastings will feature a product that is both accessible and affordable, Apple Cider Vinegar. A perfect example of a fermented food that can be easily included in our daily diet, this is an opportunity to taste some of the best Irish Cider Vinegars on the market today.

Apple cider vinegar has been valued for centuries as a nutritious foodstuff, natural remedy, tonic and antiseptic.
We have naturally fermented this cider vinegar from the best of Irish apples. Unlike some ‘big brands’ manufactured cheaply by bulking up with water and cheaply by bulking up with water and sugar during fermentation, we ferment only pure fresh-pressed apple juice. This gives our cider vinegar more flavour and more natural apple goodness.
Any jelly-like deposit or strands visible in the bottle are harmless evidence of the live bacterial ‘mother’ culture, and valuable proof of its quality and authenticity.
- Use instead of wine vinegar in recipes for marinades, salad dressings, chutneys, pickling etc. May be taken, diluted with water, as a daily tonic drink.
- Salad Dressing: for a simple yet delicious dressing, mix 1 tablespoon cider vinegar, 4 tablespoons olive or sunflower oil, salt and black pepper to taste.
- Daily Tonic: A popular recipe for a daily tonic drink: 1 tablespoon cider vinegar, 1 teaspoon honey, mixed in a glass of warm water, taken twice daily.
Llewellyn Irish Balsamic Cider Vinegar 250ml
This unique Irish Balsamic Cider Vinegar is made by a natural fermentation process starting with fresh ripe apples. No other ingredients, such as sugar, water, preservatives intrude along the way. The final result is a perfect balance between the tanginess of the vinegar and the sweetness and fruitiness of the apple. Direction for use:
- Shake well before use
- Dilute 1 teaspoon in a small glass of water
- Honey or juice may be added to sweeten if liked
